Warm quinoa and mushroom salad with citrus vinaigrette

Ingredients for warm quinoa salad:

200 g of Quinoa
600 ml of vegetable broth
1 pinch of salt
1 branch of celery
50 g of chopped walnuts
Salt and pepper
½ cucumber
2 tomatoes
Olive oil
Sprout mixture

Mushrooms with citrus

1 orange juice
½ lime juice
1 tablespoon of oil
1 garlic clove
1 branch of thyme
1 tray of Bolettus for salad
1 teaspoon of panela



1. Clean the Quinoa with cold water. Put it in a casserole and add the broth. Add a pinch of salt.

2. Cook at medium heat for 15 minutes and check that it is al dente. Drain and cool.


1. remove the nerves from the celery and cut it very thin.

2. Chop the nuts.

3.Cut the tomato into petals and make thin strips.

4. Peel and cut the cucumber.

5. Mix everything with the quinoa, add salt and pepper and add a little oil.

Mushrooms with citrus

1. Heat the oil in a pan and brown the chopped garlic.

2. Add the mushrooms and stir fry a few minutes. Add the thyme.

3. Add the juices and cook a few minutes until the juice has been reduced a little.

4. Remove from heat and reserve.

5. Prepare the sprouts in a bowl, put the mixture of quinoa in the center with the help of a ring and serve the mushrooms on top controlling that there is not too much juice.
